Kaiseki-style cuisine unique to Hakone,
served in a grand hall brimming with Taisho-era romance
Dining
Woven together by water that has been flowing for a century and the four seasons of Sagami Bay and Hakone.
Experience the luxurious flavors of a once-in-a-lifetime experience in a private setting.
Behind the scenes, the cuisine at Kansuiro is underpinned by the harmony of this region’s “water” and “seasonal ingredients,” all captured on a single plate.
Our pristine “spring water,” discovered by chance during railway tunnel construction in the Taisho era, has been flowing continuously for over 100 years.
Every morning, we use this bountiful water to carefully prepare a crystal-clear dashi broth and cook carefully selected rice to a fluffy perfection.
Fresh seafood delivered from Sagami Bay and Odawara, and the rich, flavorful bounty of the land nurtured by the Hakone mountains.
Please take your time to savor these once-in-a-lifetime flavors, carefully selected by our head chef, in the elegant grand dining room on the top floor.
*Please note that meals (dinner and breakfast) at our hotel are available exclusively to guests staying in the "Main Building."
